In 2020, I faced a life-changing accident that left me with limited mobility in two fingers on my right hand. Chronic inflammation became my unwanted sidekick during this challenging time. Eager for a solution, I dove into the world of this healing juice after hearing about its anti-inflammatory powers.
So, I committed to a month-long celery juice ritual, downing a glass every morning on an empty stomach. The results? Mind-blowing. Not only did the inflammation subside, but I also shed the extra weight I'd gained during my three-month bed rest and noticed a significant improvement in my digestion.
They say it takes about 21 days to see the full benefits, but for me, the magic started happening on day 5.
If you're looking to maximize the healing effects, aim for sixteen ounces a day. But if you're battling chronic issues, feel free to up your dose to twenty-four or even thirty-two ounces.

You can make their juice with a cold-press juicer or a blender; the instructions vary slightly. Let's get into it.
For any of the methods:
Wash and chop your ingredients.
You must only coarsely chop the celery and apple to fit the juicer or blender.
Celery leaves are edible and nutritious, but they have a bitter taste. I sometimes use them, but I recommend experimenting first with celery stalks so you get acquainted with the flavor and start including leaves if you wish.
Otherwise, you can eat celery leaves in salads, add the to your favorite pesto sauce, or use them for compost.
Juicer Method
Step 1: Turn your juicer on and run all coarsely chopped ingredients through, using the tamper. We recommend mixing the different ingredients so they all pass smoothly. If you use large chunks of apple, the outer skin may get stuck, so we use quarters.
Step 2: Sometimes, I add water while the machine still works to push out stubborn remnants that may have gotten stuck. You can optionally add fresh lemon juice and drink immediately.
Blender Method
Step 1: Add one cup of water to a high-speed blender, plus all the ingredients. Except for the lemon if adding.
Step 2: Blend for 30 seconds.
Note: if you prefer to keep the juice's fiber, you can skip the straining and add more water to make it thinner.
Step 3 (optional): Strain the resulting mixture through a fine-mesh sieve, colander, cheesecloth, or nut milk bag to remove the pulp. Optionally, add lemon juice.

Also, I wouldn't worry much about the color, because celery produces changes from place to place. We move around quite often, and the celery we get everywhere varies in color; sometimes, it is much whiter, and other times much greener. I have to say that I prefer the dark green stalks because it is a sign of having more nutrients and chlorophyll, which is excellent for our bodies and detox purposes!
